About Ajitetsu

A Kobe Beef & Wagyu Specialist Since 1949

Since 1949, Ajitetsu has upheld the tradition of Japanese beef in Kobe — from selecting and buying whole cattle at auction, to aging and cooking each cut, to exporting premium Wagyu overseas. Every step, from auction to table, is handled in-house at our restaurants in Tokyo and Kobe.

01

Sourcing at Auction

Our experienced buyers hand-select whole cattle at auction, judging each one by grade, marbling and flavor — Kobe Beef among many other Wagyu varieties, each one just as exceptional.

02

Aging Each Cut

We age and process each part of the animal individually, drawing out its unique texture and flavor.

03

Served in the Finest Style

We serve true Wagyu the way that best reveals its flavor — as steak, yakiniku (Japanese BBQ) , shabu-shabu or sukiyaki.

One of Japan's Most Renowned Wagyu Brands

What is Kobe Beef?

Kobe Beef is a certified brand of beef produced from Tajima cattle raised in Hyogo Prefecture. While all Kobe Beef is Wagyu, not all Wagyu is Kobe Beef — only beef that meets strict standards may be sold under the Kobe Beef name, internationally known for its fine marbling, tenderness and balanced flavor.

At Ajitetsu, Kobe Beef is one part of a larger commitment: every Wagyu we serve, certified or not, is selected to the same uncompromising standard.

Why Kobe Beef is Special

The name represents a defined origin and certification system — not simply any beef served in Kobe. This distinction matters for international visitors seeking an authentic Kobe Beef experience.

Origin Hyogo Prefecture
Standards Strict certification
Character Marbling & tenderness
